EL GT style as in hub in rotor not great for track?
Or the calipers too arent appropriate?

TBH i've tracked the standard size brakes a few time at Adelaides local track which is notorious for fading brakes and never had an issue.
I was running a DBA slotted rotor, Bendix SRT pad and Race fluid.
